Cookies ~ gluten free, grain free, sugar free, egg free

I will post the lemon cookies recipe but look below for a few alterations we love.

Lemon Cookies
2 ½ cups blanched almond flour
½ teaspoon sea salt
½ teaspoon baking soda
½ cup butter or ghee
3 tsp lemon extract
½ cup honey

Combine dry ingredients in a large bowl
Stir together wet ingredients in a smaller bowl
Mix wet ingredients into dry... let the mixture sit in the fridge for about 30 minutes
Form ½-inch 1-inch balls and press onto a parchment paper lined baking sheet
Bake at 350° for about 10 minutes or until barely brown. The key is to not overbake these.
Cool before removing them from the parchment paper.

Chocolate Chip
If you can find a safe chocolate chip brand then replace the lemon with vanilla and simply add chocolate chips

Peanut Butter
Replace lemon with vanilla, replace butter with peanut butter, add one egg.

Cinnamon
Replace lemon with vanilla and sprinkle with cinnamon

Pecan and coconut crunch
Replace lemon with vanilla and add chopped pecans and finely shredded coconut.
