Loose stool 6-months post-op and diet questions

I got an ostomy reversal on December 2023 after having my second bowel ressection. I only had the ostomy for 3 months before it got reversed.

Since the reversal, I pretty much only have loose stools. There is no sense of urgency. I only go 2 times per day. My most recent colonoscopy, CRP, and Fecal calprotectin were good.

I'm just curious if those who had multiple bowel resection (mine was part of my terminal ileum, ascending colon and half of my transverse colon) had just permanent loose stools.

To be frank, if I have loose stools for the rest of my life without a serious flare, I'll be incredibly happy. I'm just asking mostly out of curiosity.

Secondly, even when I'm feeling good, I noticed I have to be careful with vegetables. In particular, any greens and depending on the day some other vegetables like cooked carrots and soy bean sprouts, result in me pooping undigested bits. It doesn't necessarily cause me pain. I just see green leafy bits or what not.

Do yall still eat foods you see coming out as long as your not symptomatic or do yall really try to limit it the best you can.
