1 cup softened coconut butter
1/3 cup honey
1 egg
1/4 cup lemon juice (juice from 1 large-ish lemon)
1 tbsp grated lemon peel
1 tsp baking soda
Dash of salt
1. Mix coconut butter in a food processor until smooth
2. Add the rest of the ingredients and combine in food processor(Bits of lemon peel should no longer be visible)
3. If dough seems too liquidy, refrigerate for a bit (It will be sticky but should hold its shape)
4. place spoonfuls of dough on parchment lined cookie sheet. Keep in mind that they will spread out a little.
5. Bake 10-12 min
