SCD Sloppy Joe Mix

Sloppy Joe's

2 lbs. ground beef
one can 28oz diced tomatoes w/juice
½ cup water
1 tsp. salt
1 tsp. dried oregano
1 tsp. dried basil
½ tsp. pepper
½ tsp. dried thyme
1 large red bell pepper, coarsely chopped
1 large onion, coarsely, chopped
1 large carrot, coarsely grated
1 large zucchini, coarsely grated
2 garlic cloves, pressed
1. Cook the ground beef until browned. Drain the fat.
2. Add the rest of the ingredients and simmer with the pot half-covered for 45 minutes or until the sauce is thick. Stir occasionally.

It's a chunky meat sauce. My kids love it! Serve it with SCD legal bread or over spaghetti squash. If you have non-SCD eaters they can put on bun or over pasta.
