Schär Mix b flour and fibers

I’m on free gluten diet and I bought Schär mix B flour and in the ingredients I see 5.1g fibers in 100g as I know it’sa lot for Crohn suffers. are the fibers “dead” in oven?

I have no idea but I have had the schar bread and it’s been okay - probably the least unpleasant out of all the gluten free breads
