Quick, easy, and a lot of flavor.
Broiled Gorgonzola Shrimp
1-1/2 lb shrimp (i used raw)
1/2 cup grape tomatoes cut in half
1/2 cup black olives cut in half (you'll have to find legal ones-would be just as good without)
1 ripe avocado, sliced
Mix all except avocado together with enough oil to coat. Salt and pepper. Spread out on foil-covered cookie sheet. Squeeze half a lemon over all. Broil until shrimp are opaque, about 5 minutes. Sprinkle with gorgonzola cheese and broil another minute. Serve with slices of avocado.
