I've had my ileostomy since I was 19. The only sport I gave up was rugby.
When I play hockey or softball I wear a protective guard over my stoma.
Confirm with the doctor but I can't see any reason not to continue with sports after your reversal.

If you are thirsty all the time you are likely dehydrated. When I start getting dehydrated I drink pedialyte. It's very easily absorbed in the system.

If diarrhea is present then dehydration is possible.
Has the doctor done a blood test to confirm?
But with dehydration I would expect the other signs you mentioned to be present.
