2. I made a wheat-free, dairy-free, chocolate zucchini cake for my daughter's birthday. It was delicious, nobody could tell it was made with 'weird' ingredients and it is the first cake I have eaten since June 2011. So grateful for yummy cake that I could eat.
 
I feel fortunate to have health insurance. and a loving caring family!!
 
I am grateful for modern medicine today and that it is helping me get over this bout of Bronchitis, slowly, but it's helping ;)
 
I am grateful for a skilful GI who did my recent colonoscopy almost painlessly
I am grateful for having a super Family doctor very caring very supportive, nothing too much trouble.
I am thankful to have supportive family and friends

Today i got some pain relief and that was a relief, feel almost normal, Im gonna play some guitar when the room stops moving yeeehaaa!

Make the gluten-free all purpose flour blend first. I make everything low fat, so I substituted 6 Tablespoons of unsweetened applesauce for some of the dairy-free butter. I used half Vegan Shortening and half Buttery Flavour Spread for the other 6 Tablespoons of fat.

I used vanilla soy milk in the cake and made my own glaze by combining 1 cup of icing sugar with 5 teaspoons fresh lemon juice and 1 teaspoon of lemon zest (if you/your family can tolerate it).

Poke holes in the top of the cake with a cake tester and pour on the glaze holding some back so people can add more if they wish. The cake tastes best if it is allowed to mellow for at least a day before eating. (Hide it!)

My daughter suggests adding a few chocolate chips (non-dairy) for the texture and extra chocolatey flavour. I think that it would taste great with chopped apples or pears instead of the zucchini as well (with or without the cooca).

Just FYI, I usually replace ALL the oil in baking recipes with an equal amount of applesauce, but have never replaced 'butter', so not sure if it would work the same. But replacing all the oil has never been a problem. I've also experimented with the applesauce mixed with other fruit (strawberry, blueberry, etc.) and it adds a very mild flavour. :)
 
I went shopping and used my gift card and bought two shirts and a ladies bra lol. Still got 20 bucks left! Everything was 40-60% off... and the hubby is making dinner!!
 
thankful for our much maligned NHS and for my (mostly) patient husband.And really looking forward to Spring.Daffodils Bluebells and birdsong.bring it on !!!!!!
 
Just had my hair and make up done for a wee night on the town so I'm happy :) and my kids have been surprisingly well behaved today also!!
 
My sweetie brought home an iPad for valentines day! I guess he knew what a rough week it had been! I am thoroughly enjoying my weekend! Oh I love that man, his timing is always so perfect!
 
I'm thankful for my wonderful, loving husband who helped me through a 1 1/2 year flare and 2 surgery's in 9 months. And that I know spring isn't far away.... :)
 
I am thankful for this site, and all of you! It just feels good to know your not alone:) I am also thankful to have a great family and doctor:)

I could list all the big things that I'm thankful for, but instead I'm telling what makes me happy right now.

Right now I'm happy that it's saturday, I'm drinking my morning coffee in peace and the kids are watching TV. I'm meeting my best friend who's a hairdresser and I'm getting my hair done today. Little things, that make me happy. :p
 
I just an appointment with the original GI who first seen me.three years ago. He is the supposed to be the best. I think I got lost in the loop somewhere in the National Health service. This can only be a good sign . Feeling positive , so Im goin out for a cycle.
 
I'm happy that I have the weekend off work, it's sunny outside and I'm sitting on the sofa having cuddles with my cat.
 
I'm thankful that hubby and I got to go out for dinner, just the two of us, lastnight. 2nd time this week, what a treat! Thankful for him and my daughter and son. Thankful for my job that is keeping me inside on a gorgeous spring morning, and thankful I only have to remain here until noon and can then enjoy the day, lol! :)

Today I'm happy that I didn't have to poop yesterday more than once (and unhappy that this morning I've been in an out the toilet three times... BUT let's not focus on that, 'cause this is a happy thing thread!). I'm happy that tomorrow I'm starting to work again, it's so nice to see everybody, especially my boss! Also I'm happy that my scalp isn't burning anymore b/c of hair bleach! :thumleft:
