Does anyone know if theres any lactose free cheese out there I've been wanting to make a pizza for ages but it's not the same without cheese
 
I have tried many of those "cheeses" and most are gross. They don't melt right, or at all and have some an icky plastic aftertaste. It is kind of a let down. Have you tried goat cheese? I noticed I could eat small portions of goat cheese. It isn't too bad, I actually really like it now, but it does have an interesting aftertaste to get used to...and it melts more than the fake cheeses. Like the site says that Crabby posted, the real hard, aged cheeses have been pretty good on my tummy too, like the aged, crystallized parmesean and gouda. Gouda cheese on pizza is yum.
 
I will have to check out that Cabot cheese that cross-stich gal posted too. I have noticed I can eat real sharp cheddars too. I used to have a chart that showed the lactose levels in different dairy items, but I can't find it now. It might be in a book I have. I will see if I can find it.
 
well I made a pizza with no cheese and let me just say it tasted way better than any pizza with cheese that I remeber I made a ham and pineapple one at it was delicious I used some organic shaved ham from a deli and some canned dole pineapple and made my own sauce ws delicious without cheese
 
Did a post on lactose on my blog that covered that. Basically, the harder aged cheeses have no lactose or very little. Soft cheeses have more. Aged Parmesan, Asiago, Romano are all good. Some Swiss are good. Same with aged provolone. Look for any with 0 grams of sugar on the packaging and you should be good.

I do Parmesan on my pizza instead of mozzarella all the time. Most pizza places will sub it for you if you ask.
