8 digestive biscuits
Medium pot (about 300g) of low fat soft cheese
Honey to taste
Fruit for topping
Crush the biscuits and divide between 4 bowls.
Add honey to cheese a spoonful at a time, stirring and tasting till you have your preferred sweetness. Divide between the bowls.
Put fruit in a saucepan, add a tablespoon of water. If it's a tart fruit (like berries) add a spoon of honey too. Heat and stir until fruit is mushy.
Pour on top of cheese in bowls.
Chill for 30 minutes or so.
This is so quick and easy to do! And by not setting the base with butter, and using honey to sweeten, it's a healthier option too.
