So I'm a freshman in college, and I was diagnosed with Crohn's in August of 2012. Does anyone know of easy recipes or cheap things that I can eat with only a microwave and mini fridge? Our cafeteria food is really greasy and I'm tired of eating mac-n-cheese! Thanks! :)

It is possible to cook with a microwave (I don't have any recipes on hand but I'm sure you can find a ton online. I know you can steam veggies in there and cook rice and pasta). Main thing I wanted to mention was to be careful with meat products in the mini fridge. They really don't keep things fresh really well (especially in the mini freezer). My husband got food poisoning after eating meat kept in our mini fridge (I didn't because I tasted it and spit it out, I told him it was bad but he ate mine and his anyway). I mostly ate pre-made food from Trader Joes when I was in college and hit up the salad bar at the cafeteria (with minimal amounts of salad).

Speaking of rice. I've purchased some minute rice that's ready made before, all that needs to be done is microwave it. There are some individual cups you can buy in sets sometimes. Just have to decide what to have with that plain rice...

That sounds like something my dad would do! He will eat things because he hates wasting food and we say to him, its not worth getting food poisoning over!

You can make jacket potatoes in the microwave. Variety of fillings as well so you wont get bored of it!
