Frying!!!!

I thought it was more to do with the frying process that was bad.

I shallow fry food with olive oil (meat and veg etc) and dont have any problems.

If using woks then the higher temps will break the olive oil up (into free radicals i remember my mum telling me?) so something like groundnut oil would be best.

I deep fat fry using veg oil (normally rape seed) but dont do this often, only chips really, as I find it doesnt agree with me too much

You can saute or panfry with a little olive oil as long as you don't turn the heat up too high... You can't deep-fry with it, because at higher temps, the oil will smoke and lose it's nutritional value and, it will taste very bitter; unpleasant. And, like rygon said, definitely no olive oil in a wok! Best to stick with an oil with a higher smoke point for frying - canola/rapeseed is best.

What is the difference between using olive in a frying pan as opposed to a wok? I always use olive oil for cooking, except I have peanut oil for chinese cooking. I never deep fry stuff, just shallow frying to seal meat before I make a curry or something, though my boyfriend sometimes does eggs or bacon. So should I keep another sort of oil handy for that sort of thing?

Woks are used at very high temps, that's why you shouldn't use olive oil in it. Peanut oil would be just fine.

with woks you heat them up until they start smoking. This helps keep veg crunchy and cooking times down (thats why everything has too me cut up finely)
Sealing meats, curries, eggs bacon etc I use olive oil, you dont get as much heat using a pan.
Extra virgin olive oil on the other hand shouldnt be used for cooking at all as it breaks down at low temperatures, its more expensive as well

basic rule is the lighter in colour an oil is the higher the smoke point. So peanut and grapeseed are good for high temp, whereas olive and oils from nuts (aside from peanut) are terrible for high temp.

I have found that any fryed food upset my stomach. But it is a trial and error thing with everyone. So I say give anything a try at least once.
