Hi

I have a crock pot that gets to 90 degree on low, that is way to high .

anyone knows the correct temperature for collagene benefits of bone broth?

ANd what gear do you use to cook slowly during 24 h while not at home?

90 degrees is less than boiling (less than simmering too) ,so , while you might be able to optimise, you will still be making a good broth

You will be absolutely fine with that slow cooker. I do mine on medium and keep it simmering (i'm guessing about 95 degrees C) for 24 hours, works a treat. If i turn it to low i get NO simmer at all.
Usually nice thick gel...sometimes a bit thin but lots of other factors can be involved

A table spoon of vinegar helps draw out minerals and by the end of it i can crush the bones with my fingers

edit, found one article suggesting 'ideal temperature was 190F which is 87C so there you go, almost perfect, but it should just simmer
