I make a vegetable soup with mainly root veg- so potatoes, carrots, parsnip, swede, and onion or leek. All diced small and cooked together in just enough vegetable stock to cover. You can add some black pepper, herbs and spices, tomatoe purée if you can tolerate it. Simmer for as long as possible (I use a slow cooker and leave it all day), but at least 3/4 hour. Then blend before serving.
You can also add chicken- it tastes better if the chicken is cooked (I used leftover roast) then break it apart with your fingers and lob it in!
