Before my CD worsened, I used to enjoy Mexican Food. My mother went to college in Los Angeles during the early 1960s and learned to cook authentic Mexican dishes from roomates/friends. I still have cravings, especially for dishes that have soft, corn tortilla shells. Is there anyone here on the forum who can eat Mexican food without troubles? If you have problems with it, what have you tried? A while back, I shared my mom's recipe for taco stuffed pasta shells. I love the recipe, but I'm still craving Mexican food in a big way.
 
I wish I could do Mexican food. I can't do beef or pork, dairy, or anything fried or spicy (even mild spices do me in), so Mexican food is out on multiple counts. Awhile back I tried doing a fairly plain refried bean & rice burrito. That went okay the first few times I tried it, but then my acid reflux got too bad and my reflux does NOT like refried beans. So now I'm back to eating no Mexican food whatsoever. :(

So maybe you should share that recipe again ? LOL

I try to substitute the meat in dishes with some vegetarian products as much as I can for Gab; although as times goes by since the surgery she seems to be able to eat more of a variety of foods. She's never been a big meat fan anyhow, but she sure does enjoy a good mexican meal! :)
 
I eat chicken enchiladas... they seem pretty mild. Unless you can't handle cheese. There is a lot of cheese involved.
 
I think I've been lucky because spicy doesn't bother me very much. It makes me a little gassy and occasionally gives me the runs, but no pain at all. I just can't have lettuce or cheese on it. I can only have a little sour cream, which I usually use creme fraiche instead. I also tend to make my own Mexican food, instead of going out for it, so I know what is made and how it is prepared.
 
Thank you for all the suggestions. Tracy, the recipe is on this forum under Jane's Stuffed Taco Shells. The only things that really do me in with Mexican food are the corn shells/chips, onions, and sometimes tomatoes (depending on my acid reflux). I love the flavor and texture of the corn products. Sigh!
 
Anything with tomato is a killer for me. I love tomatoes, though, and I always wait to the height of tomato season so I can buy a perfect ripe tomato on a Friday, eat it, and then be sick all weekend.

Not Mexican, I know, but corn bread has always been one of my safe foods. You might want to try it if you're craving corn. I was put on to this by a fellow Crohnie who could eat next to nothing.

Also, I miss spicy (picante) food a lot but just can't eat it, but found that Nepali food has spices that agree with my Crohn's gastro system. Also, I can eat most Middle Eastern food. It's nice to have something spicy that doesn't come back to haunt you.
 
Thanks for the tip. I used to eat tomatoes like apples, until my acid reflux got out of control. I can eat tomatoes, but I have to be careful, or I'll be in for a lot of suffering.
 
I use flour shells and not corn.
no lettuce, no corn
if I use beans I tend to mash them up small. (making my own refried beans)
no beef, but I use chicken.
watch your spices.
pick your vegi and avoid to much raw.
I tend to have tomato in burritos I make but if feeling unwell, I pick between using salsa or tomatos and not both

just watch what gives you issues and work around it.
what kind of dishes are you missing? since unless I am flaring I can eat Mexican. (however, depends on the dish)
