I was thinking of trying to eat some salads - meaning more vegetables and fruit.

Are any of you able to eat them and which ones. I know it will be different for each of us but just curious to which ones provide the less problems for us.

I find lettuce doesnt particulary go down well for me, so I try and limit the amount I eat.

One of my fav salads is:-
thinly sliced red cabbage
grated parsnip
orange segments
chopped prunes
with a little extra virgin olive oil, black pepper and the orange juice (left from the segment cuttings) drizzled over.

I bout river cottage's veg book that has some great recipes (like the above) just using veg (and not as a side dish). Their website has some great free recipes as well
 
My son doesn't think chunks of raw vegetables would be good for his system, so he has a smoothie everyday, made of 2 or 3 organic bananas, a 10 oz bag of organic, frozen fruit (usually blueberries) and some organic nut butter. I often throw in a handful of organic greens, and they get blended up with the rest of it, which seems to make it easier to digest.
 
I try to avoid too much salad for my son but give him some maybe twice a week and cooked veg the others. I peel the cucumber, take the seeds out the tomato and he seems okay with lettuce, I just tell him to chew really well. We also have a juicer to get a few extra veggies in raw form. Fruit smoothies are also good.
 
My son likes salad, so I allow a small serving at meals. It doesn't seem to bother him as long as portions aren't too big. I have been using "Arthur's smoothies". It is pure fruit juice and purée, but puréed to the point that there are no visible bits of seeds. Pour some of that in a blender with ice, banana and yogurt. Yum!
