I found a physician blogging about low carb and read through his blog. He says there is a connection between carbs and inflammation, and specifically says that it's inflammation that is responsible for heart disease. Now, that made me wonder if there might not be a connection with high carbs and the inflammation associated with Crohn's.

Inflammation and Carbs blog entries he's done. Not much, but still intereseting.
