Stuff cooked in oil

I was diagnosed just a couple of months ago (crohn's in terminal ilium - jeez, the terms we learn to use in a short space of time!), but of course I've known for quite a while that some things just don't agree with me.

One in particular is anything deep fried...chips (fries for the americans), seafood, stuff like that. Sadly, I don't have a problem with weight loss (sometimes I wish I did, but I'm sure that would be a whole other set of problems), so I shouldn't be eating this stuff anyway, but sometimes it's just to tempting! Anyways, sometimes I have a really bad reaction, and sometimes I don't. Just wondering if maybe it's the type of oil being used (I don't use it at all at home).

Has anyone had any experience in narrowing down what might cause a reaction and what might not? Or is it just maybe that sometimes I'm flaring and sometimes I'm not? I'm still very new to all this, and trying to figure out what is a flare for me...
 
Rebecca is right the oil is the difference. Having said that, fats of any kind are hard to break down. Fries become lactose after they are deep fried (only non dairy that does because of the cooking process). If you must have fries I would get a good digestive enzyme to help break down the fats. But fries are not good for anyone. Better off to bake them in the oven with mild spices.
 
I loove my chips. Fat/oils dont seem to bother me at all yet cow and goat dairy stuff does as it affects both my lungs and guts.

You could experiment: but a small bottle of oil, say olive as that's usually more tolerated and use it for a week. Use no other oil, and as Rebecca aid keep a diary of everything you eat. A pattern is often easy to spot.

Hi Pen, thanks for the tip. I had no idea that fries become lactose. No wonder I have problems with them then - like most of you I'm lactose intolerant!
 
you will find that although olive oil is a "good" oil, its not to good for high temp frying as it breaks down.
I use it for 99% of my cooking, but if making chips in a deep fat fryer then i use vegetable oil.

Try making stir frys with a tsp or two of veg oil. Sesame seed oil and groundnut oil are great for this as well.

If making chips then just oven cook them. Cut the potato up, put them in a pan of cold water and heat until boiling. Drain, lightly coat in oil (and any seasoning you want), then bang them in the oven (preheated at approx 200degC) for 20-30mins or golden
 
Thanks everyone for your comments. I really only have deep fried stuff when I'm out, only have oven chips at home (not very regularly), which is why I thought it might be certain types of oils that effect me.
