[1] What all are they looking for under the microscope when intestinal biopsies are done? I am curious to know if other diseases are looked for besides IBD - like malabsorption syndromes.

[2] Is Eosinophilic Grastroenteritis Disease [EGID] just really another type of IBD?
 
As far as I'm aware if they're looking for granulomas which are an immune cell or something like that, its not present in UC but it is in Crohn's and if they need to differentiate between the diseases when it comes to UC or Crohn's Colitis then its vital they do that. I'd imagine they're looking for other signs like pre cancerous cells. I don't know about any viral or bacterial infection in the biopsy results. As for your second question, I'm afraid I can't answer that but there is a wiki here that might have the answers you need :)
