What's the best way to cook skinless boneless chicken breast?

Hey everyone!

Skinless, boneless chicken breast is just about the only meat I can tolerate right now. I bake it, but I always end up overcooking it and the thought of eating another chicken breast makes me wanna puke.. (so sick of it!!!) and it doesn't help when it's overcooked to the point of tasting like rubber haha.

My diet is super plain! How can I cook skinless boneless chicken breast and give it some good taste? I want it to be nice and juicy!

I don't really know if I should be sauteing or frying right now (was hospitalized 6 days for a partial obstruction last weekend and I wanna be careful until I see my GI Jan. 28th) so I'm really trying to watch things I should avoid.

Two ways I do it:1) Grill it, that way you can keep an eye on it and keep it turning making sure it's not getting too dry. I find chopping it first and sticking it on a kebab works well. I season in salt/pepper/thyme maybe coriander

2) Bake it in the oven wrapped in silver foil (not completely sealed). Season again. Smear some soya spread on the foil first. Easy

Thanks! :) I don't have a grill because I'm living in an apartment right now but I will def try the 2nd way you mention.

Do you think I could do the kebab thing on a George Foreman grill though? (I have one of those, but somehow I always manage to overcook it on there too... I think I am easily paranoid about eating uncooked chicken lol!!)
 
You just stole my thunder about a George foreman adjust the temp down depending on model you could spray the chicken with one cal keeps it moist,you could experiment with sauce if your stomach can handle.try one from the supermarket and if you don,t like it no harm done.all the best good luck
P.s I usually have the corn relish you use on burgers,go,s with anything and it's well cooked so the corn is fine for me(experiment).

Thanks!! :) I can't adjust the temp on this model. I usually find that I can tolerate sauces. I haven't gotten sick in awhile (only the pain/blockage/hospitalization).. so now I'm basically just trying to avoid foods that will irritate my gut without me knowing it. I'm thinking of going paleo!
 
What about smoked fish it's already cooked,simmer in hot water not oil.i need to write a cook book!

Lol!! Yeah that could be an option too. :) I don't eat much fish which is strange because it's a big part of my "heritage" and a lot of people eat it where I'm from (unfortunately the battered, fried, unhealthy kind!) So I don't really know how my body will react to it, but I've been meaning to pick up some salmon to try since it's supposed to be really good for you and generally not many people with crohn's have problems with it!
