A tasty veggie dip recipe?

Hey everyone!

With my Crohn's, I mostly survive off of simple carbs like bread but I'm really trying to eat healthier. I'm not a big veggie eater (never have been) so I'm trying to spice up raw, tasteless veggies with some dip.

Problem is they are SO unhealthy! I was looking at the grocery store and was shocked at the fat & salt content :( So I was wondering if anyone has recipes or product suggestion for a healthy dip? (FYI:leafy greens don't mix well with my Crohn's)

Eggplant pesto (i use it as a spread on toast, but should work as a dip or with pasta)

Sorry I forget the quantities but you will get the general idea...

2 ish eggplants
1/4 cup almonds
2ish sundried tomatoes (can use in oil or dry)
fresh basil (if you can't have this it should be fine without it)

Soak almonds and sundried tomatoes
cut eggplants in half lengthways and then criss cross all through the flesh but not through the skin. Spray with oil and sprinkle with a little salt. Roast at 180 degrees celcius skin side down till mushy. Scoop out all the flesh - is easier when cool, but can be done later.
Drain and wizz up the almonds and then sundried tomatoes. Then add eggplant and keep wizzing til you are happy with texture. NB do not need to add oil or parmezan so seems healthier than normal pesto - I got it off an oil free vegan recipe site!

Keep in the fridge.

Wish eggplants were in season here!

I will be watching this thread too...:) Great idea.

Oh, there are some great artichoke and white bean dip recipies too - I keep meaning to try them...
 
Avocado basil dressing:

1 avocado
1 cup basil leaves
1 garlic clove
1 tablespoon lime juice
1/4 cup olive oil
Salt and pepper to taste

I absolutely love this recipe!
