Best oil?

Hello everyone,
I wanted to ask what dressing (olive oil, seed oil, coconut oil or other) is the most digestible.
On the web I read that olive oil is good for digestion and against inflammation.

Your experience do you recommend?

Only 2 I've tried are olive oil and vegetable oil. Honestly can't tell the difference between the two as far as which is more digestible. We read something about olive oil on how it's better for you and that's why we used it for a few years. However, vegetable oil is less expensive. So, we've been sticking with that.
 
My favorites are:

Macadamia nut oil, olive oil, and coconut oil.

I do not cook with mac nut or olive oil and try to keep the heat as low as possible with the coconut oil. High heat and oils = bad news.
 
You're not the first one that talks about Macadamia nut oil. Where do you buy it? herbalist? Internet?

here in Italy I can not find in regular stores. I'll have to try it with a bio shop maybe?

I find cold pressed & organic coconut oil and hemp oil, both to be excellent against inflammation.

You can cook with most coconut oils; but hemp oil should never be heated.

I do not use oils at all for cooking - I just sweat foods in water or stock.

Occasionally I will eat coconut oil straight from the jar. I add hemp oil to fruit smoothies.

I don't like dressings on salads really, especially oils that make the salad feel, look and taste slimy. But occasionally will have a dressing made from smooth tahini paste, coriander and lemon juice.

You generally cannot buy Macadamia oil in the normal big supermarkets here either.

But many health food shops here do sell it.

Or maybe look for a small independent luxe grocer; as it is often pretty much viewed as a specialized product.
