Oats are one of the few high fibre foods I can tolerate. So I made these oaty breakfast bars instead of buying cereal bars. If you can't eat dried fruit, you could experiment with grated fresh fruit.
1 cup oats
1/2 cup flour
1/2 cup dried fruit (chopped up if it's big pieces)
juice from 1 apple
runny honey (or stand your jar in boiling water to make it runny!)
Mix the oats, flour, fruit and apple juice together. Add enough honey to make a doughy consistency. Line a baking tray with greaseproof paper. Tip mixture on, and press down with the back of a spoon. Bake for 20 minutes at 180 degrees C. Let it cool, then lift out greaseproof paper and cut into pieces.
