My wife has used the base for this diet cake to make me various cakes that are amazing. Its the first time i have eaten this sort of thing for over five years. Oh she leaves out the cheese for me and i use jam to sweeten it as a sponge sandwich.

Ingredients
5 spray(s) Cooking Spray, Calorie Controlled
3 medium Egg, Whole
100 g Sugar, Caster
100 g Flour, Wheat, White, Plain, plain
200 g Cheese, Soft, Low Fat (less than 5% fat)
1 zest(s) of 1 Lemon, Finely grated
3 teaspoons Sugar, Icing
2 tablespoons Lemon Curd, mixed with 1 tablespoon hot water
6 slice(s) Lemon, and
1 sprig(s) Mint, Fresh, to decorate (optional)
Instructions
Preheat oven to Gas Mark 7/220°C/425°F. Mist two 18 cm (7 inch) sandwich tins with low fat cooking spray and line the bases with circles of greaseproof paper.

Using a hand-held electric mixer, whisk the eggs and sugar together until very pale and light in texture - this will take about 5 minutes. To check that the mixture is thick enough, lift up the beaters (switched off!) - they should leave a trail for a few seconds.

Sift the flour into the mixture and fold it through lightly but thoroughly, using a large metal spoon. Divide the mixture between the prepared tins and level the tops.

Bake the cakes for 8-9 minutes until golden brown and springy to the touch. Remove from the oven and turn them out onto a cooling rack. Cover with a clean damp tea towel and leave until completely cold.

Mix together the low fat soft cheese, lemon zest and icing sugar. Spread half the mixture over the surface of one sponge, then spread the lemon curd over it (stir it well first). Sandwich the two cakes together and spread the rest of the soft cheese mixture on top. Decorate with lemon slices.
 
I'm a big fan of anything lemony but I suck at baking! I wouldn't even know where to get or how to make lemon curd!!! It sounds awesome. I welcome anyone to make it for me for my birthday! :)

Im sure she leaves out all the lemon based stuff and adds a little vanilla flavour to make a plain sponge.
 
mmmm I love lemon curd. Amy, you can look in the import foods section of the grocery. Sometimes you can also find it by the jams.
