This is a brownie recipe I’ve done about a dozen times. I tested many recipes before settling on this one. I like it because it’s simple, and it can be adapted to be more cakey or more fudgey/gooey depending on your personal taste. It will beat any store-bought mix, isn’t too expensive, and can be made into really nice brownies with quality Belgian chocolate and finer quality ingredients.

Cooking is both a science and an art in that you mix ingredients, but use your senses to guide the process. Baking is however much more science than art. It is vital that you measure the ingredients exactly, use the right baking pan size, and follow the mixing directions provided also to the letter. Baking is all about the chemistry of ingredients. The order in which they are mixed matters and how they are made to interact with each other will affect the final taste and especially texture. I’m an experienced cook and it took me years to understand you do not approach baking the same way you approach general everyday cooking. If you want consistent results you will need consistency in your method. In fact, you should treat baking cannabrownies as a scientific experiment that requires rigor and attention. If you do, you are guaranteed to find long-lasting, soothing relief of your symptoms with a successful batch. Considering the price of cannabis is significant in most places of the world, I encourage you to get the proper equipment to measure your ingredients (measuring cups, measuring spoons, a scale, and properly sized baking pan to begin with) otherwise the results might be less than impressive and you’ll have wasted precious medicine.

LET’S BAKE
To make any sort of cannabis edibles, there are always two steps:
1- Prepare the cannabis so it is in a cooking-ready state by extracting the cannabinoids out of the plant into a suitable fat
2- Bake your recipe as usual with the fat you prepared previously

If you are going to make cannabis edibles, it may be helpful to have some basic understanding on the chemistry of cannabis and how it interacts with our body.

The medicinal benefits of cannabis come from molecules called cannabinoids. Cannabinoids are produced by structures called trichromes. Trichromes look like tiny, gelatinous, translucid tentacles that grow on the surface of the cannabis flowers near the end of the plant’s grow cycle. A cannabis plant in late flowering stage will appear frosty and scintillate under light. A bit like the vampires in Twilight. *Shrug*

After the plant is harvested, the trichromes dry and form a white/brown powder over the flowers (or buds). It is this powder that contains the bulk (99%) of your medicine. The plant itself consists of fibers and other plant material that are of no benefit to you. This is why vaporization is much superior to combustion, because it removes as much as 80% of the unneeded byproducts you would normally get with combustion.

If you simply grind some flowers and add it to your brownie mix, an important quantity of cannabinoids will never be metabolized and you will lose significant potency.

Cannabinoids are liposoluble. This means they are molecules that can bind with a molecule of fat if they are provided with enough energy to do so. It cannot bind with water, which is why water filtration devices such as bongs or waterpipes are often used by smokers. Water acts as a filter that catches unwanted plant material, “smoothing” the smoke (so you don’t cough). Since the cannabinoids cannot bind to H20, cannabinoids remain in the smoke until it makes contact with your bronchioles in your lungs. Then, the cannabinoids are assimilated into your bloodstream and will eventually bind with your CB1 or CB2 receptors, which are mostly situated in your brain and your gut.

What we’re going to do is cook the cannabis into a fat, in this case butter, for a very long time and at very low temperatures. When we do this, the cannabinoids contained in the powder that is attached to the plant itself will slowly come undone from the plant and bind with the molecules of fat contained in the butter. Think of it as the musical chair of cannabinoids. The idea is that when the music stops (when you turn off the heat), all the cannabinoids should be sitting comfortably on their molecule of fat inside the butter and have left the plant behind.

By extracting the cannabinoids into a fat, you ensure they are in a state ready to be metabolized by your body, which will increase potency to maximum levels.

STEP 1 – PREPARING THE CANNABUTTER

INGREDIENTS
One pound of butter (salted or unsalted)
7g of dried cannabis flower buds

The method I use for extraction is completely dummy proof. You will never ruin your butter or waste herbs if you follow it. It does involve the purchase of a slow cooker (crockpot), and if you don’t have one you will have to, but see it as an investment. You are essentially making your own medicine; you should get the proper tools suited for the job.

1.1 I add 7g of fresh cannabis for every pound of butter I melt. In this particular case, I added 14g since I was making a double recipe. The brownish looking spices is vaporized cannabis. A few weeks worth in this case. Vaporization is efficient at extracting cannabinoids but it is not 100% efficient. By recycling your vaporized herbs, you ensure no cannabinoids will go to waste.

1.2 Start melting the butter on LOW in a saucepan, making sure it never bubbles or rises to high temperatures. If you heat the butter too much you will induce changes in the chemical properties of its makeup and it will affect potency later.

1.3 Grind your herbs using either a blender, food processors, manual grinder or coffee grinder. Do not use a knife, or scissors. If you have none of these, then do not grind the flowers and simply add them to the mix as they are later.

If you use a blender, make sure to recuperate all the cannabinoids that have nested on the surface. You can use a spatula, or a little amount of water. If you use water, you can dump it into the crockpot and it will simply evaporate, leaving the cannabinoids behind with the others.

This is the actual medicine. Don't waste it!

1.4 Take out the crockpot. Set it on low. Add a few tablespoons of water so the bottom is covered. This is to prevent any potential burning. Add the melted butter to the crockpot.

1.5 Sprinkle your grinded cannabis in. Mix thoroughly, but gently. Cover, and let the crockpot sit there overnight (8-12 hours). By cooking at low heat, you are not damaging the cannabinoids. By cooking it for a long time, you ensure all the cannabinoids will find their way into the fat, saturating it with the Δ9-THC and CBD we desire.

1.6 In the morning, turn the crockpot off. Let it cool 15 minutes, then use a cheese cloth (best) to filer the butter. You should have a brownish/greenish looking mixture (which for some reason I forgot to photograph).

This is what a cheesecloth looks like. You can use a coffee filter instead, but it will retain some cannabinoids, so you will lose some potency.​

1.7 Refrigerate the mixture. The fat will solidify, while the water left behind will accumulate at the bottom. After about two hours, the butter will look green like pictured below. Take a knife and dig yourself a hole in one of the corners of the Tupperware. Pour the water out. You are left with pure cannabutter ready to be used in your recipe. You may freeze it if you have too much. Frozen cannabutter can be preserved this way for months without losing much potency at all.

STEP 2 – BAKING THE BROWNIES

INGREDIENTS
1/2 cups all-purpose flour
1 teaspoon baking soda (not the same as baking powder)
1/2 teaspoon salt (if you used salted butter, omit the salt)
1 1/2 cups white sugar
1/4 cup water
2/3 cup cannabutter
1 (12 ounces) bag semisweet chocolate chips
2 teaspoons vanilla extract
4 eggs

Optional:
1 (12 ounces) bag semisweet chocolate chips (for gooey version of brownies)
1 cup coarsely chopped walnuts (for taste, if you don’t like nuts omit them)

2.1 Preheat an oven to 325 degrees F (165 degrees C). Combine the flour, baking soda, and salt in a small bowl; set aside. Grease and flour a 13x9-inch baking dish. This is important. You must absolutely use 13x9. If the dish is too small, the mixture will rise, the top will overcook while the middle never will, and the result will be less than desirable. If the pan is too big, the brownies will be dense bricks of textureless chocolately blobs.

2.2 Combine the sugar, water, and cannabutter in a saucepan. Cook and stir over medium heat until the butter has melted and the sugar has dissolved.

2.3 Remove from the heat and stir in one bag of chocolate chips and the vanilla extract until the chocolate has melted.

2.4 Let the mixture cool for ten to fifteen minutes, or fill the sink with room temperature water and sink the saucepan’s butt in the water for faster cooling. This is a precautionary measure to ensure you do not cook the eggs you are about to add. If you do not cool the mixture and your eggs start to cook when you add them, it is all over and you have to start again.

2.5 Pour the mixture into a mixing bowl, and beat in the eggs one at a time until smooth. If you are a professional iron chef I’m sure you could whisk this away with your iron arms, but for us mere mortals, we need an electric beater to do this right. I stress you must add the eggs one at a time. Trust the chemistry!

2.6 Fold in the flour mixture until incorporated. If you do not know what folding means, please Google it and watch a video as it is difficult to explain in words. Folding is basically a very gentle mixing action with a spatula. By gently folding your flour in, you are not adding an excessive amount of air to the mixture. If you prefer your brownies more cake-like, then simply beat the flour into the mixture with your beater. The recipe as it is given is the perfect balance between fudge and cake for me, but tastes differ, so feel free to experiment. If you are not an experienced baker, then I advise you to follow the recipe exactly for optimal results.

I usually fold my flour in three parts to make it easier.

2.7 Fold in the remaining bag of chocolate chips along with the walnuts. You do NOT have to fold in an extra bag unless you want an extra “gooey” version of the brownies. Sometimes I add it, sometimes I do not, it depends on what I feel like eating. In this case, I did add it, as well as the walnuts.

2.8 Pour into prepared pan. Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan, 45 to 55 minutes. Pay close attention to the brownie after 45 minutes. Each oven is different.

2.9 Cool completely before cutting into squares to serve. As it cools the sugars keep interacting with each other, enhancing taste further. Resist the urge to plunge into the dish as soon as it comes out. The cooling process is required to get the full effect. After it has cooled, you can heat it up again, serve it with vanilla icecream, a filet of caramel, a chocolate sauce, a raspeberry coulis, etc. The options are limitless!

This is the extra-gooey version, which I can only eat with a spoon and a cold, tall glass of milk. Be creative in your presentation!​

SAFETY
You cannot die from marijuana overdose. Nobody has ever died from cannabis use. If you underestimate the potency of these like a certain betterhalf did recently, you will be couch-locked for an entire day. That is the worst possible case scenario. Do NOT eat these then drive unless you know exactly how it will affect you. Cannabis edibles are slow acting but long lasting. It may take up to two hours to feel the effects. Usually thirty minutes will suffice.

If you are eating this for the first time, start with ¼ of a brownie and wait thirty minutes. If you are not feeling anything, eat another ¼, then wait another thirty minutes. Do this until you have enough relief.

If you have never consumed edibles but have vaporized/smoked cannabis in the past, do note this is much more potent. The first batch I did, I ate a full brownie (a 3x3inch square approximately) and in spite of my high tolerance to vaporization, it completely knocked me off my ass. I slept for fourteen hours like a bear going through hibernation. If you are going to experiment with edibles, you should do it on a week-end with a clear afternoon and evening.

And make something fun out of the experience. Invite friends over and make a day out of it. It is not rare to see people accompanied to their chemotherapy treatments. This is no different, and let’s face it, A LOT more fun.

Francis: thank you for the very detailed recipe. Pictures help a great deal as well. For those of us following the SCD, the sugar, chocolate, and flour are strictly forbidden. Other than taste, would the end product be adversely impacted by using almond flower, almond butter (like peanut butter but made with almonds), and honey in the place of flour, chocolate, and sugar, respectively?

You can substitute ingredients by healthier alternatives for sure, or use the butter prepared into actual healthy recipes (such as homemade granola bars).

You can even replace the butter with coconut oil if you prefer, which is probably one of the healthiest fat there is.
 
ye ok i will try this, as for someone with lactose intolerant , which butter would be best to mix it with? isnt it true it needs to be the highest fat content butter to be the best potency? and lactofree butter or soya butter isnt going to hold as much?

Deffinatly going to try this. I am very new to using cannabis and found your comment about sleeping for 14 hours thrilling! (I may have to wear a diaper but well worth the sleep!!
I have tried edibles as well as smoked some but with dismal results. Could be this is a group activity meaning someone else might have some experience. I have zero!! Oh well trial and error usually make for good training. I am excited about the possibilites of these brownies!

Hi, a couple of questions to the OP, if you're still around:

1 Approximately what temperature is your slow cooker reaching here (since models vary)?

2 And how much does it matter (what sort of tolerance is there)? If one put a large pot on simmer on the smallest gas hob, would this REALLY damage the cannabinoids?

I thank you so much for warning everyone to be careful about how much they ingest! I once tried making brownies, and did the thing where you add the MJ to the butter so it is in cook-able form ( I heard you should do this but didn't know why at the time) They turned out great, but thank God I didn't have anything responsible to do that day... I laughed hysterically at everything for about an hour then laid on the bed comatose for about 14 hrs... it sure was fun, but I was certainly useless for a while! Lol!
 
Francis -- thank you for your donation to the database. I am a 'senior', hyper-sensitive to chemicals, diagnosed with UC. I discovered (out of desperation) a few years back that mj restores near normal function to my colon. Once or twice a year when inflammation is bad, I take a daily oral dose of natural cooked product, and within a few days I'm in good shape. My method has been to saute some bud (kept in the freezer) in butter, then apply to some crackers with cheese, or other things to help mask the strong taste. I take it at bedtime and have never had a "high" from it. I've never been careful about temps, and I just eat the whole thing -- quite a contrast to your careful approach. I read your post as I am looking for a more controlled method of self-medicating -- would even welcome Medical MJ if I could access it. I know that all product is not the same strength, so wonder about what control quantity in a recipe gives. I will lower my frypan temp now, and focus more on the butter than the 'bits'. Any other suggestions?
 
I have done this a few times, and it really works well!! I just wondered though, when I leave the crockpot on low over night I notice it bubbles ... is this bad? I know your not supposed to let it get that hot when you first melt the butter in a sauce pan, so I wondered if I am ruining a lot of the cannabinoids.

Medical cannabis is a misnommer. Cannabis is cannabis. Cannabis branded as 'medical' is the same as branding some food as 'organic'. It's not a protected label, nor is it enforced by some sort of authority. It's very likely that the street pusher in my town has strains identical to what a dispensary would have. It's just that dispensary has more options.

If you want to mask the disgusting taste, you can do a tincture instead of a butter. Instead of transferring the cannabinoids from the herbs into butter, you transfer them into Everclear 94% alcohol. The process is the same as with butter, but it requires more finesse and attention (you can't leave it on overnight).

To make a tincture, also referred to as green dragon extractions in some circles, here are the steps:

Green/Gold Dragon Recipe
7g/150ml

DECARBOXYLATION:
Bake 7g herbs @ 220F for 25-30 minutes or (less heat for convection and or metal pan). This is variable dependent on the dryness of the reefer. If using seeded pot, cleaned weight should equal 7 grams.


FREEZE:
Place the decarbed 7g herbs in sealed Mason jar into the freezer for 24 hours.
Also place a pint of Everclear or other 190+ proof alcohol in freezer for 24 hours.
After 24 hours add 150 ML to Mason jar with herbals. Shake aggressively for 15 minutes.
Place back in freezer for at least 4 hours and shake again for 15 minutes.


STRAIN:
1. Cheesecloth. Cut your cheesecloth large enough that you can fold it a couple of times finishing with a square about an inch larger than the mouth of your jar. Take the lid off the jar and take the middle out, just leaving the ring. Place the cheesecloth over the top of the jar and screw the lid ring over it tightly. Take a bowl big enough to hold the liquid and turn the jar upside down over it. That will strain the plant material from the alcohol without making a mess. You may have to shake it a bit but with just 7 grams it shouldn't be too bad.

* Don't worry about pressing the material just yet. When it's pretty dry, take off the ring, remove the cheesecloth, put the center back in the lid, seal the lid and put it back in the freezer for 24 yours. You should also have your fresh alcohol in the freezer too. You'll go back and do the 24 hour combine and shake and the next one again, a second run.


2. Gold Coffee Filter. After you've strained the plant material, you're ready for the gold coffee filter. Place it over a container and pour your alcohol solution through it. You'll see a lot of trichome husks that have been stripped of the thc oils. When it dries it will look like a fine blonde kief but there's nothing left in them. Just toss it. You may have to work the filter around a little to get past those husks. If you, don’t have a gold filter you can use paper ones.


3. Paper Coffee Filter. For the third and final filter, take another mason jar without the lid and stick a paper coffee filter into the top. Push the filter into the jar far enough to form a cup and screw the cap ring over it or use a rubber band to secure it to the jar. This will be the slowest part of the process. Pour your GD into the filter until it's full. Keep filling it until it all filters through. Since you've only got about 5 ounces, it shouldn't be too bad. You will have to move the jar around to find fresh spots in the filters. Those husks really gum it up but it's worth the time. You'll get a nice clear Green/Gold Dragon. Of course, you can always filter it again if you're a perfectionist.

4. Now that the filtering is finished, put the lid back on and seal it. Set it aside in a dark cupboard until the second run is complete.

5. Follow all the same steps for the 2nd run. Freeze reefer and alcohol separately for 24 hours then combine and shake for 15 minutes, put mix back in the freezer for 4 hours, then shake, shake, shake for 15 minutes.

6. If you have a press, place a square of cheesecloth or other material over your press, being sure to allow enough on each side to fold over the ball. After you’ve strained the weed, you can dispose of the leftovers as you see fit. If you don't have a press, cut the cheesecloth large enough so that you can pull the corners together and use a wooden spoon handle to wrap them around and then twist. You don't have to squeeze like crazy because the alcohol drains well.

7., 8. Repeat steps 2 and 3 as stated above.

REDUCE
Now we’re ready for the main event, concentrating the extraction by reduction of the alcohol.

1. Set up your double boiler configuration away from flame or other open heat sources. Use a fan for ventilation. If using an electric range, be sure your vent fan is on high. The more ventilation the better. While there won’t be the concentration of vapors there would be for larger quantities, there’s still enough to cause a flash fire if not careful.

2. Have the heat source for your double boilers at a level that causes a gentle boil in the water. If you’re using a crockpot where the water may not boil, just put it as high as you can. If you use an electric rice cooker that only has one temperature, just keep an eye on it so it doesn’t go beyond the desired level. If you don’t have a double boiler set up, air evaporation will work, just slower

* If at all possible, your upper chamber(bowl) of the double bowler should fit snuggly in the lower portion a few inches above the water line. This is to prevent loss of steam and therefore water. If it’s a loose fit, keep an eye on the water level and add more as needed.

3. Measure your combined haul from both runs. If you don’t have a measuring device, you can mark a spot halfway down your jar and use that as your guide. As your tincture reduces, you can keep track of the level easier.

4. Add your dilute GD to the upper chamber and reduce it by half. Alcohol boils at a much lower temperature than water and thus will not damage the thc. Depending on your heat source, your solution may bubble a little bit, a rolling boil, or just swirls. What you want at minimum are the swirls. That shows there is action.

5. Finally, this recipe is designed to give you approximately 4 fluid ounces of concentrated Green/Gold Dragon tincture. We used 5oz of alcohol per run instead of 4 because of the small volume. I wanted to make sure the pot had good cover. For larger quantities, that extra bit wouldn’t be necessary. Wouldn’t hurt but would need more reduction. So for the last step, reduce your solution by half, or down to our goal volume, which should be about 4 fl.oz for this size batch, and bottle it. It is now officially ready to sample.

If you prefer to keep making a butter, a crockpot is better than using your frying pan method, which is no doubt wasteful as you must be vaporizing some cannabinoids unless you are going at it with very very low heat. A crockpot is about 100USD, aka its cheap for the purpose it serves.

If you are using a crockpot at the lowest setting I wouldn't worry about the bubbles.
 
Hi FrancisK7,

Do you have any tips for minimizing the smell of cooking the cannabutter? I have my slow cooker and everything all ready to go, planning to use coconut oil instead of butter, but I live in an apartment. Thinking I will just open windows and turn on lots of fans. How concerned should I be? Any advice?
