chokecherry syrup with Stevia
So I made Chokecherry syrup with Stevia.
This is what I used, but of course with artistic license. You can adjust as you feel fit. This is what I had to process.
30 cups of chokecherry berries
boiled down for 1/2 hour in pot with 7 cups of water.
strained through cloth. either cheese cloth or I had muslin, that worked well.
50ML of Stevia or to taste.
Poured into Jelly Jars and pressure cooked as you would green beans here in Alberta. Your elevation may be different.
For me it was 20 minutes at 10 lbs.
The syrup is runny. More like a juice, but the flavour is very good. Shouldn't need much on a banana pancake. Tart and sweet. :banana:
