Dehydrating vegetables

Anyone have experience dehydrating vegetables as opposed to cooking them? I want to retain enzymes and nutrients but not sure it will be easy on digestion. Dehydrators do cook a bit but below 118 degrees.
 
I dehydrate a lot but I don't have problems with fiber.

What I also do is make soups! The key is to make sure to drink the broth as well as a lot of the nutrients leech into it. I feel like soups really help me a lot and I make huge batches and freeze some of it for easy lunches and dinners.
