I am perplexed by this and would love some help troubleshooting it from those who are like minded. I have made my own mayo for about a year and I have never had a problem with it. I buy this lovely new Vitamix and I cannot get my mayo to turn out in it. I even tried the recipe in the book. The only thing I can think is that my house is pretty cool right now ~ maybe room temp is too cool? Any thoughts?

Ok, after messing up a very large $$ amount of olive oil, I think I have it figured out. The Vitamix recipe calls for a speed that is simply too high. It seems to heat the mayo and break the emulsion before it is done. I tried again today on a lower speed and it was great. :thumleft:

Ive made it in a blender before and you have to put the oil in as slowly as possible, and let it mix in fully before you put any more in.

Never tried making it in a blender. I've always used a whisk, but takes quite a bit of effort. Would really be nice to be able to use a blender instead.

If you put the fixings in a tall, narrow jug just big enough for the stick blender, it works great. Put the blender in touching the bottom, turn it on, slow pull to the top (not too slow), and you're done.
