"extra heavy syrup" in all canned fruit

sometimes i crave stewed prunes in "extra heavy syrup" ... what is this mysterious "heavy syrup" ... i enjoy it so much that id like to make a batch at home, i figure its corn syrup + glucose/fructos/sugar???
 
Extra heavy syrup is just sugar and water... You can use all white sugar, honey, corn syrup, or a combination of whatever you like. There are different 'weights' of sugar syrup, and it all depends on the ratio of water to sugar... Light syrup has less sugar, more water; heavier syrup has more sugar, less water.

Here is a rough guide:
Light Syrup: 2 cups sugar + 4 cups water

Medium Syrup: 2.75 cup sugar + 3.5 cups water

Heavy Syrup: 3.5 cups sugar + 3 cups water

You would want to heat these on the stove just until the sugar dissolves in the water. Don't cook it long - you don't want to end up with caramel (or do you??) :) And, be careful - syrup gets a LOT hotter than water.
 
Mmmm, pie filling with spoon. Look at you guys with your "fancy" terminology... "syrup." ;) It's "goop" to me. Sometimes there's fruit in the goop too. :)

Aaaaaaaaaah, thats what i wasnt doing right.. heating.. i just dumped the sugar in the water. lol

I don't know if what you mean by
stewed prunes in "extra heavy syrup"
is the same I am thinking of but what I love with prunes is to actually get some dried and cook them with water and sugar, yes, but I also love to add slices of orange and a bit of orange juice and a tad of vanilla. It's really really good.

Yes! mom used to make me a fruit stew.. she boiled a bunch of fruits like plums, peaches, nectars & pears with sugar, took a couple of hours to make and was delicious.

They dont sell that at the grocery store but they do have stewed prunes, which have been cooked & soaking in "exrta heavy syrup" (dans du sirop tres epais). Look in the canned fruit isle it is a glass jar labeled "stewed prunes" (Pruneaux étuvés) by Del Monte.. $4.50.

I tried to make some at home, cooking prunes in sugar water, but its not the same thing. i have to buy small special plumes they turn into prunes, so i can turn them into prunes myself, for the recipe to work, i think.

Well did you take the dried prunes?
I love to do what I just explained in the previous post with the IGA, "Nos Compliments" bite size prunes. It works fine. I'll have to have a look at these Del Monte, I might have been blind and never saw them lol...

i poured a bit of water, a lot of sugar, and some dried prunes in a pot and slowly heated it up.. then let it sit for a couple of hours.. turned out nice :)

they are hard to spot.. cause they only stock a few jars.. i dont think many people like it. lol and they are kinda pricey.
