I know many people try to reduce or eliminate dairy and gluten from their diets. Without actually going completely dairy- or gluten-free, you may want to try 'reducing' them in his diet. The biggest change my son has made to his diet has been significantly reducing the 'really bad' junk food (such as McDonalds, etc.) but he still often has his pizzas, subs, etc. (But, as per dietitien's instructions, has eliminated seeds, whole/crushed nuts, most veggie/fruit skins, popcorn.)
Not really a 'change' to his diet but as I've often read that coconut oil is anti-inflammatory, I did find a recipe that has been a 'hit' for him - chocolate candies made with coconut oil (he's even asked what's the max he can eat in a day!
), I've posted the recipe in the Cooking & Diets for kids.
There's a recipe book I used in the past, may try to resurrect it
, which had lots of recipes with 'hidden' veggies. While not intended for IBD or any other specific restrictions, the recipes all incorporated cooked, pureed, soft veggies which, for many people, is better for IBD. The book is called Deceptively Delicious, written by Jessica Seinfeld.
