I dont know how many of you can handle lentils, but I love this recipe and its really economic. If you use red lentils they dont have any skins on them like the other lentils do. When done it resembles a thick sauce that can be put on bread, rice, or pasta. I have also substituted the honey for brown sugar or real maple syrup, and the olive oil for real butter.
1 cup lentils (I use red)
2 cups water
2 tbsp honey
2 tbsp soysauce or tamari
2 tbsp olive oil
1/2 tsp ginger
1 clove garlic
1 small onion
salt & pepper to taste
Bake in a covered dish at 350 until tender (about an hour to an hour and a half).
