I want to go on a low-carb paleo diet, and I read that you should try to stay under 20g, I was wondering if this is the same for people with crohn's or does it change?

If you have crohns you want to concentrate on
1/- eliminating 'toxic' or inflammatory foods (eg, "paleo AI protocol")
2/- eating nourishing foods (eg. 'bone broth")
3/- restoring healthy gut bacteria (probiotic foods)
By all means try low carb, but don't lock yourself into some ideology.
20g is well into ketogenic territory and not everyone does well on it.
Obviously you need lots more fat to use as energy (protein can get turned into glucose through gluconeogenesis).
You want to read up on it a bit so you know the dangers beforehand.
Low carb paleo might do wonders for some but so many things in the diet get changed that you never know if it was the low-carb or the real food or not eating particular irritants or whatever that was the most benefit.
I do like the theory that it can be good to starve out the bad bacteria but low carb for extended periods is not for everyone.
I think real food is a good way to go, and for me that's what paleo means, with carbs to suit your needs from whole nutritious foods - if you are underweight then eat sweet potatoes, be sensible about it
