I have recently tested chocolate on my elimination diet. I can eat very small amounts of really good chocolate that has no dairy or additives. So, of course, I needed a choco dessert that I can eat.
Melt 1/2 cup of really good choco chips with 1 tablespoon of water. Meanwhile, whip up 1 package of Silken tofu ( drained of excess water) with a small amount of sweetener, like brown rice syrup, if you like. Then add the melted chocolate and whip again. (Use a blender, food processor, mixer or your hand.) Let set in the fridge overnight or for a day. Voila, chocolate mousse!
Makes 4-6 servings. It has a very smooth texture, and a very bittersweet chocolatey taste. Yum.
