Now that I'm back to work, I'm also back to the "see what the heck I can grab for lunch" point of the morning.
Usually I have leftovers from dinner, but when I don't I usually have a grab-fest of yogurt, cheese stick, peanut butter cracker pack, and a granola bar.
GRANOLA BARS ARE MY FAVORITE QUICK GRAB!
This is the problem - I'm doing low residue now, and they are made mostly with oats. Any ideas for a low residue peanut butter granola bar that I can mix up and cut and keep in the fridge at work? I'm bad at improvising recipes. Here's my idea -

Smash up some Rice Chex cereal and stir in some Rice Krispies. Put in a bit of melted butter and some peanut butter. Maybe graham cracker bits, brown sugar, honey or vanilla. Press it in a pan, put it in the fridge, cut it into bars.
Any ideas?
(I can't add raisins, sunflower seeds, nuts)
 
I would stick with the Chex cereal. Try this recipe:

8 cups of Chex Rice Cereal
1 Cup Peanut Butter
1/4 Cup butter or margarine
1/4 Teaspoon of vanilla

Butter bottom and sides of a pan (8x10)
In a small bowl melt butter and peanut butter in the microwave, use 30 second intervals to avoid scorching. Add the vanilla to the melted butter and peanut butter mixture, stir well. In a larger bowl stir together the Chex cereal and the peanut butter mixture until very well coated. Pour the contents into the pan and push down and form a level surface using wax or parchment paper. Cover and place in the fridge to harden.

If you want to add a yogurt topping to it use this recipe:

6-8 Oz. of Yogurt - Vanilla works best
1 Beaten Egg
2 Tablespoons of flour

Mix the above ingredients and spread over the pressed bars, place in the oven at 375 degrees (preheated) for about 10-15 minutes. - You can always add more vanilla to this mixture for more umph or even add some cinnamon :)
 
I like your rice crispies treats idea. That reminds me that I got the stuff for that about a month ago but never got around to making them.
 
Okay I tried it. I forgto to buy Chex, but I had a small dose of energy from somewhere, and decided if I didn't make it now it'll never happen.
I used -
1/4 cup of butter
about 1/3 or 1/2 a (18 oz) jar of peanut butter
10 marshmallows (for stickyness)
Microwave 1 1/2 minutes, stir
Microwave 1 more minute or until melted
Stir in a bunch of rice krispies (maybe 4 or 5 cups)
Stir in 1/2 sleeve (1/6th of a box) of graham crackers chopped
Press into a greased or sprayed pan
Cool and cut into bars

Tastes good, the only problem is it didn't stay in bars - it crumbled.
I think it needs a little more sticky.
I also didn't put it in the fridge.
I'll try that and only post back if it helps.
(I don't think it's gonna help.)

Colt - don't call these rice krispie treats. I am trying to call them granola bars so they feel healthier. I don't even think the granola bars they sell at the store are really healthy, but they sound better for you. Actually these do have WAY less butter and sugar.
