If you can't handle the real thing try this:

Spread one side of a pitta bread with a teeny bit of tomato puree. Add a pinch of herbs. Sprinkle over whatever cheese you can tolerate. And add your toppings (you might want to precook any veg). Then bang under the grill for a couple of minutes, until the pitta crisps up.

It's so quick and easy! No grease, and you can use goats cheese or whatever (I bet you could even use Dairylea or something if that's all you can handle).
 
Highly recommend people to try this. Easy to make and delicious! Used to eat pitta pizzas almost everyday, I usually use daiya cheese cant tell the difference.
 
These are delicious, quick, and super easy. I used to eat them when I was on Weight Watchers. You can also use Pizza Quick Sauce in a jar if you want that "authentic" pizza flavor. I especially like the way the pita makes a dry yet chewy crust. Yum.
 
Yes! We make these a lot! We use the thicker pitas, not the thin dry ones. I think they are used more for folding rather than in the pocket.
I use ranch dressing as a base instead of tomato sauce, and boiled chopped chicken with celery and bbq sauce. ANYthing tastes good on it!
 
The ranch dressing version sounds yummy. I'll have to try that.

Tomato sauce doesn't bother me. I think acidic stuff will if I eat too much too often but that's generally not something I do anyway.
