Request about stats on Crohn's pre/post WWII

Hey guys! I've been searching for info on the history of Crohn's. What I want to find is specific data that shows the instance of Crohn's before WWII, and then after WWII, as our food supply began to be flooded with processed foods made with chemicals. I have heard that the instance of Crohn's/IBD jumped up at this point, but I have been unable to find the actual data. Does anyone know about this?

In one of the history books I have it says that king Edmund (or of that time) died of suspected Crohn's and that was pre 1400.
