It's a personal thing, you will have to experiment I'm afraid. Think about what food you know you can and can't eat, and try and build on that. Like I mostly do low res, so I like a smooth sauce with no bits in. Most chinese styles are OK for me, and mild curries. But if you know you can't tolerate spices, curry is not the best place to start!
 
Kildare, can you tolerate eggs? If so, you might want to try doing fried rice (make it yourself at home so that you know what ingredients go into it - you can make it simple with just eggs & rice, or you can add whatever seasonings/sauces you like). I don't really cook but my hubby makes me fried rice all the time, and he frequently adds things like chicken or shrimp for protien. It's tasty and it's one of my go-to safe foods.

Edit: I should add that fried foods usually don't sit well with me, but this one does. I think it's because it's not deep fried/not breaded - I can't do things like fried chicken, but fried rice is no problem.
 
tryin to be safe and leave out the fried stuff...jus a lot of crap goin on at the minute so im trying to be safe...startin a new job on saturday so ive to be on the best behaviour!!
 
id say start off with mild sauces, keep a food diary and log when you go to the loo, feel any pain etc etc..

the best bit of advice i will give you is never 'reheat' rice, any thats left after cooking or microwaving from one of those pouch thingys just throw in the bin!!
 
I eat a ton of brown Jasmine rice. But in my case, I haven't been diagnosed with IBD, so I may not be the best example.

You might start with risotto, not the easiest to make at 1st (takes a bit of practice) but it should be especially gentle on the gut http://italianfood.about.com/od/tipstricks1/a/aa091697.htm Like fried rice, you can vary it in almost unlimited ways.

BTW on reheating, I make mine in huge batches & have never had any trouble reheating it in the microwave :)

pre cooked rice in the pouches like Uncle Bens Express has been cooked then sterilised so it's ok to re heat in the microwave.
It's rice that has been cooked from raw that harbours bacteria and shouldn't be reheated.
I use these pouches a lot and I add broccoli and salmon to mine with butter, yummy!

I don't know about that, Joan. When I make brown rice, it boils covered for about 30 minutes, if that doesn't sterilize it, I don't know what would :wink: I've really never had a problem reheating "real" rice. I'm not a fan of processed foods in general, and for me, pre-cooked rice is included in that list. Whatever works for you, but I find it's so easy to make rice on the stove with just a sauce pan, I don't know why anyone would buy the processed stuff.
 
Oh yeah David I totally agree! Cooking your own is much better, I only use the pre cooked rice for convienience when time is tight!
 
its been highlighted on many occations that once you cook the rice its when it cools the bacteria sets in so best to just make what you eat.i used to deliver to chines takeaways and restaraunts and they always had big tubs of rice lying about only covered by a dish cloth yet when they ate it wa fresh steamed rice,veg and fish.does that not tell you something that they dont even eat the stuff they sell to US!!!

Proper cooking sterilizes food. Once you've done that, there is no live bacteria present. Because of the water present in cooked rice (unlike dry), it has to be properly stored to prevent spoiling from the introduction of "fresh" microorganisms. If you packed the rice in a vacuum immediately after cooking, it could be stored at room temperature (it would in essence be canned). It would also last indefinitely in the freezer without spoiling. If the rice is covered and correctly refrigerated after cooking, you won't have any problems for a reasonable period (several days, at least). I do this all the time. Rice is no different in this way than any other food.
 
I need cooking classes. I am so bad. I may suggest this to the new health centre where I go. They have classes for mens cooking. I'd like to elarn more ehalthy cookign like rices and fish etc. Big batches would be awesome.
 
A rice cooker is a simple way to cook rice. Measure out the rice and water, set the timer and presto- 20 min later cooked rice and no mess. When I was quite ill but still eating food, I would also stir-fry small bits of chicken and veggies in the bottom of the pot before adding the water and rice. I would also add extra water just to make the rice even easier to eat. For sauce I used small amounts of dairy-free margarine and soya sauce, or I simply cooked it in broth for extra flavour.

My son is going away to school next year. The only appliance he plans on using all year is the rice cooker. He is a very picky eater, doesn't cook much, but he loves the rice cooker.
 
When I was eating I used to love boiled brown, risotto rice with a tablespoon or 2 of just plain extra virgin olive oil drizzled over the top. ( You could use any kind of rice though) :thumleft:

Its really delicious and very easy on the gut. :p

I love rice especially batsmatti rice! Smells so good when cooking! I use it instead of pasta as well, make like a spaghetti but with rice for the noodles. Mmmmm
 
You might want to try some of the other grains as well, which are also very delicious and also very easy on the old gut! Things like:

Quinoa
Buckwheat
Cous cous
Bulgar wheat
Millet
Amaranth
Durum Wheat
etc...

I know some of these might sound a bit exotic, but they are absolutely delicious and very very easy to prepare. You just boil them in water.

Then drizzling them with extra virgin olive oil, butter, or any oil for that matter will just make them taste sensational! ;)

Asian style...

Japanese: Tsukemono (pickled vegetables) over rice
Korean: Kim chee over rice
Hawaiian style: shoyu (soy sauce) over rice

Even plain rice can be delicious!
 
I just read through this thread, and the whole bacteria thing scared me. So I googled it and found this informative article.

In a nutshell it says that as long as you properly cook and store the rice, and don't keep it in the fridge for more than 3 days, it should be fine. The problem is when you (or restaurants) leave rice out for more than 4 hours without refrigerating it, that's when you risk bacteria growing. Kinda makes me not ever want to get rice from a restaurant again because I know a lot of places do cook a lot of rice in the morning and then just keep it warm and use it throughout the day. Doesn't really seem safe to do that. Which is a shame, in the past on bad days I'd go to a little asian cafe near my workplace and get some plain rice for lunch. Guess I'll need to figure out something else for lunch on those days now!
 
Egg fried rice is ok as its not deep fried. Only a tbsp of oil is used and only cooked for 2-3mins.

I like rice with cheese sauce, fried onion, left over chicken, peas, broccoli, boiled egg (cut up) with cheese grated over the top
 
Sorry I can't recommend any sauces, but I've had great luck eliminating BOTH rice AND potatoes. The starch and gluten give me gas, bloating and big D.

What kind of rice seems to agree with you guys?
 
im thinking of giving up spuds and changing to rice...wat sauces are safe to eat with rice???

Sauce will depend on what you can tolerate. I use wheat-free tamari and miso to flavour rice.

I have a problem with spuds and rice. But rice is worse.

I have replaced rice with quinoa.

Quinoa is wheat & gluten free and can be eaten savoury and sweet, so very versatile.
 
Rice is seeming pretty popular, think i will try and eat more of it. Yep brown rice and veggies tomorrow for my dinner lol :) I'm hungry now and cant sleep at 0145am!!! That may be the pred!! grrr!!!!!

Changing to rice from other starches could be the best thing you do. It's much easier to digest than other starches. Refined starches and sugars sit at the root of a whole host of digestive issues.

I almost got up and drove myself to the hospital just reading this.

As for the rice/bacteria thing, I'm surprised. I had no idea. I've been cooking large quantities of rice for decades and allowing it to sit out and cool for hours all those years. I'm not going to worry about it, although I am pretty grossed out at the restaurant story.

Anyway, I freeze mine in baggies so I can thaw it for use when I need it.
