Any advice for cooking vegetables, rice, potatoes?

So dr's say I need to start balancing diet since most of what I've been eating has been meat. (excluding seafood)

Is there a certain way that I should be cooking vegetables, rice and potatoes? (seperately of course)

What vegetables would be easiest on my Crohn's cooked?

All I've been thinking: carrots, green beans and asperagus tips and don't know if any others are okay. ?

For potatoes I think taking skin off and mashing up..

And I really don't know for rice! ?

Is there a certain ways/tips/tricks to cook or prepare these foods?

Are there any other foods I should start eating daily/regularly?

Are there any types of salads that seem safer than others for Crohn's?

I tend to do vegetables in soups. Generally, I tend to make my own stock, and then make soups that I puree. I also found roasting or sauteed vegetables to be easier on my tummy. Asparagus does produce gas, but I'm not sure if this is an issue for you?

Potatoes: I also eat a lot of sweet potatoes and yams. Mashed and roasted potatoes without skins is a good idea.

Rice: I eat lots of it! I find white rice to be easier than brown rice, and I would really recommend getting a rice cooker. If you don't have one, the way to cook it is to use 1 cup of rice and add 2 cups of water. Let the rice come to a boil, lower the heat right down, cover your pot and let it cook. Once the water has evaporated, your rice is done. I tend to make a lot of fried rice!

Balancing our diets is difficult given that fruits and veggies wreak havoc on many of our bodies. But everyone's experience is different, so it's trial and error as you figure out what foods your body is able to tolerate.
