My Mum suffers from Crohn's disease and has done for many years, and lives with a stoma. She now tries to follow a gluten-free diet but also can't eat very many vegetables and basically lives off chicken. She's too scared to try new things incase she reacts badly and it's a mission trying to come up with ideas of what she can eat.

She's coming to stay with me in a couple of weeks and I decided to come on here and ask if anyone had some good recipes or ideas that I can try out with her while she's with me - I think she'll be a little braver while I'm there. She has little desire for cooking/eating because it is so difficult for her.

Please if anyone has any ideas that I can help her with I would be very greatful!
 
casserole of chicken , rice, carrots, zucchini and celery
When all these boiled. they are much simpler to digest

1. Boil chicken in pot #1
2. Peel carrots and zucchini and scrape them into the pot #2
3. Cut celery add it to pot #2
4. add rice to pot #2(preferably jasmine rice)
5. Except the chicken, do not pour the water, just take out the chicken and cut it and add it to the pot #2 -> vegetables and rice
6. Transfer the chicken water from pot #1 to the pot #2 (boiling water from the pot of chicken are good, they got natural oily sense)

boil pot #2, 10-20 minutes, until the rice cook
