Hi everyone! I'm really having a hard time changing my cooking/eating habits! I feel totally lost! I'm wondering if anyone has any recipes to share?? I figure maybe if I have recipes to look at, then I'll have some where to start and won't be so scared. Thanks in advance for any/all help!!!

I know i should probably try to follow a vegan diet, but I've like to "ease"into it, so to speak. I'm not sure how to even begin. I'm very intimidated and, to be honest, scared. Any bland, or even vegan/vegetarian, recipes that anyone could share would be great...thanks! I will also check out that website :)

Back a million years ago when I was a vegan I used to cook sushi rice and substitute coconut milk for half of the water needed in the cooking process. If you can tolerate coconut, that is some tasty magic. It comes out super sticky and dense. You won't miss adding butter because the coconut milk is soooooooooooooooooooooo fatty. You can make a ton of it at once and reheat it as needed. I ate it for breakfast with some dried fruit and maple syrup or brown sugar, and then for dinner you can eat it with stir fry - just saute whatever vegetables you can tolerate in a little sesame oil. I like winter squash or sweet potato and bok choy with a little thinly sliced ginger but that's me.
 
I make loads of soups, at least one a week. Get into veg stock cubes and buy and hand blender, and p[lay around with meat and veg soups.

I also make tsatsiki quite a lot - natural yoghurt, grated cucumbers (skinned and deseeded) and chopped mint - healthy and refreshing :)
 
Thanks HR!! I am in the process of reading about the SCD Diet. I have read a lot of posts in this forum of people that have been following this diet and it seems to work out well for them. There is a whole list of foods/drinks and if they're acceptable or not...very informative. I will try the soup thing....why do you say "get a hand blender?" I have one already, but should I have all of my soups liquid with no chunks? And I can't wait to make tsatsiki, it sounds very yummy :)
 
No probs, no not all food needs to be mush, just a good way of combining flavours i find. Ooh and you also need olive oil for tsatsiki, extra virgin if poss

Does eating pureed foods make it easier to digest? I am just curious about this. I have recently bought baby food to try, and I'm curious if thats the benefit or not (having it pureed). Do you have a favorite soup recipe to share HR? Thanks for your time and support!! I love this Forum, its so helpful :ybiggrin:
 
Pureed as at the least the advantage of avoiding obstructions. I've never really been able to determine food that causes me issues. My issues are more mechanical as I have a stoma and sub-occlusion tends to be more frequent with that so pureed food kinda saves me from this concern. I assume that its also a good idea for those who have stricturing crohn.
I guess I may say it's easier to digest as it kinda "adjust" better to the digestive tract and food is more easily digested because more saliva can get in contact with the food as it blends through it so the enzymes are working better for that matter! For that same reason, it's a good idea to kinda not swallow the purée too fast and allow it to blend with your saliva for a more proper digestion!
 
Im not a doctor, but from what I have read the harder the stomach acids in the stomach have to break down food, the more uric acid is created while trying to break down food which is why i always boil and blend my root veg like carrots and celery. There is a theory that if the environment in the stomach is clear, liquidised food will penetrate through the walls better absorbing the nutrients and fill you up for longer.

I have a courgette soup recipe it do all the time. So get a biggish pan and put in it:

About a litre of hot water
2-3 big courgettes peeled and chopped
A couple a sticks of celery of you have them peeled and chopped
A veg stock cube (I use an organic one from the health food shop)
Parsley or corriander finely chopped
Basil finely chopped
Ground pepper
A bit of olive oil
A handful of Quinoa (make sure you put this in at the start so it has about 20 mins to cook)

Leave to simmer on a low heat for about 20-25 min, then blend

Serve with a small knob of feta cheese crumbled on the top.

I love this soup, its a great winter warmer, and actually quite nice cold aswell.

Well HR, I was recently diagnosed with chronic gastristis too, so I am looking to minimize stomach acid. Thanks so much for the recipe!!! I don't know what some of the ingredients are, but I will look them up and figure it out...I can't wait to try!!!!
