I think I would try with quinoa oat and/or arrowroot and/or millet. I have never tried making crumble yet though...

Here's a crumble recipe from Dovesfarm If you go on there site there are lots of G/F recipes
http://www.dovesfarm.co.uk/recipes/search-recipes/

Ingredients
500 g Cooking Apples
75 g Caster Sugar
3 tbsps Water
100 g Blackberries
150 g Butter
150 g Demerara Sugar
200 g Plain White Flour
25 g Oats
Method

Peel, core and slice the apples.
Place them in a deep ovenproof dish with the caster sugar and water. (Reserve the blackberries)
Bake the apples in a pre-heated oven for 20 minutes.
Meanwhile mix together the butter, demerara, flour and oats with a fork until they resemble breadcrumbs.
Carefully remove the apple from the oven and stir in the blackberries.
Pour the crumble mixture over the fruit.
Bake in a pre-heated oven for 30/35 minutes.

Here's another crumble topping:

1/2 cup (60g) almond meal (almond flour)
1/3 cup (65g) rice flour
1/3 cup (75g) firmly packed brown sugar
60g butter
1 tsp ground cinnamon

Blend together, or if doing it by hand combine the flours, rub in the butter, then add the sugar.

Pit on top of whatever you want, bake for 25 minutes at 180 c

Any sugar should be fine but if you have a food processor you could whizz it up to make it finer.
