Diet tips required

Hey all!
My recent flare up has been ongoing now for ten long months during which i have been advised to follow a low residue diet which i have been pretty much keeping to throughout. I must admit the lack of fruit and veg is rather tough especially for so long, as i have been through spells of not being able to anything at all or a standard bowl of rice with oxo cube! mmmm! Im curious though to whether i could combat this problem by investing in a steamer machine as i know if i was to tackle some veg like carrots or broccoli they need to be pretty much mush. Does this actually retain their nutrients?? Also im due to see a dermatologist so am hoping to get some skin tests done to revile if i am lactose intollerant etc. Im not letting this disease get the better of me and i really feel my body is crying out for some decent food so would be gratefull for any hints/tips, recipies, meal ideas anyone could pass my way!

I am fine with veggies as long as they are mush. I think they lose some of their nutrients but not all.
 
I have heard that steaming is better than boiling for vegetables if you want them to retain their nutritional value. You can purchase a steamer insert as opposed to a whole steaming unit, which is much cheaper and is a similar cooking process to how you would boil the vegetables.

You can try to make some well cooked vegetable soup (carrots, potatoes, sweet potatoes, zuchini...); the soup can be blended if you want. The nutrients will stay in the water and you will eat them with the soup...
