Im new here, and there are multiple threads on GF, and no refined sugar eating plans. I have a few questions....

How do you all stay motivated to stay gluten free? I work in a hospital where if I forget a snack and/or lunch I am basically resorting to gluten to keep my energy up.

How do you meal plan? That seems to be the hardest part.

I have found great pastas, however, Im still searching for a good bread recipe.

Do you know of any healthy sugar subsitutes besides honey?

OOOPS I forgot to ask about a yummy milk replacement as well. And/or cheese alternatives. Not a fan of soy products, but if thats what Im left with than so be it :)
 
Sounds like you eat a paleo diet, with the avoidance of wheat and dairy items. That's how I eat also.

Well, staying motivated was fairly easy for me. Avoiding both items make me feel healthier, in particular avoiding gluten. I'm not interested in going back to the old days of always being ill, so no problems for me with avoiding wheat!

A sight you might find helpful with recipes and other peoples experiences with avoiding wheat and grains overall is Dr. Davis's sight. I saw the other day that he had a post about a cardiac nurse avoiding gluten that might be helpful.

As for avoiding milk items, after a long time doing so, I eventually broke down and started adding cheese to the diet. It seems to be the only diary food that doesn't cause me to much grief. Dutch gouda is my temperamental guts favorite.
 
Thank you!!! I'm not completely paleo, as I still rely on rice and quinoa for energy. I'll try the Gouda :) And glad to hear you doing so well on the diet. I'm in remission currently, I want to keep it that way. I find the wheat/gluten causes fatigue and bloating.
 
Why not keep a container of carrot sticks/celery in fridge and then small container of almond butter you can dip those in, so you have protein energy boost during the day? I keep some nuts in a jar in my drawer and some snack bars (seeds, nuts, honey, etc.) close by. Once you are off it for a while you will see weight drop off and feel more energy/clarity in mind. good luck!

Oh, my doc said NEVER eat restaurant or cafeteria salads. She said they spray the greens with preservative (to keep them green). She said that is why you will sometimes feel bloated after these salads. She said she discovered this when doing internship, when time/hours were odd and limited to nearby food.
