This is a recipe that can be made sugar free.It is acceptable on the SCD (Simple Carbohydrate Diet).

Ingredients:

1/2 cup of butter
2 eggs
1/4 teaspoon baking powder
1 cup penut butter (natural/ no additives)
1 cup nut flour
1 teaspoon vanilla

-Cream butter until soft
-Add the penut butter and mix both together (thoroughly)
-Add all remiaing ingrediants
-Place on a cookie sheet that is greased and bake in 325F/160C oven for about 10 minuts.
 
Ok, what the heck is "nut flower" and where do ya get it?

So these cookeis are really good...even w/out any type of sweetener? My husband loves PB cookies! Thanks.
 
Well this is more a recipe if you are avoiding sugar. I enjoyed them without any sweetner, but you can always add in if you want (but not if you follow SCD!). The diet also is free of wheat, so normal flour is not allowed.

Nut flour can be purchased at health food stores. It comes in different types (I have used almond flour) and is allowed on the SCD.
 
Tami, these aren't good like "good enough considering I have Crohn's."...They are legitamitely good and anyone from anywhere will enjoy them. :D

The truth was at the time my diet was a bit limited, so I was not sure if I loved them so much becuase they were that good or because it was a different taste. But I really thought they were good. I love penut butter too, and that provides a great taste.

Almond flour, eh... that sounds like it would taste good. I'll have to try the recipe. After all, who doesn't like peanut butter?! :D Thank you for sharing. :)

Mike, do you follow the SCD? I read the book in the past, but found that it was a little too overwhelming for me to stick by... (maybe I'm lacking in self-discipline?)

I thought the diet would be very time consuming and difficult to follow (exactly), and I know the author stressed the importance of following it very closely to obtain the same positive results.

Does anyone here follow that diet (SCD)? That would be an interesting topic...

For anyone who does, I give them a LOT of credit!

I tend to get a little obsessive at times, so I decided not to go down that road... Although the book had a lot of good points--I can't help but think there must be an easier way.
 
I was on it for a total of two weeks :D. The truth was I think I was cheating a bit anyways when I was on it (was eating bananas that were not fully ripened). It is very time consuming and hard to follow, but people are doing it. I know for a fact that my cousin has been following it for around 8 years now, and he is doing absolutely amazing on it. He has introduced a few other foods into his diet with the help of a nutritionist who is familiar with the diet, but otherwise is following it exactly.

It is a diet that you either follow religiously or do not really attempt, as the book states it is only beneficial if followed exactly.
 
Is this recipe from Breaking the Vicious Cycle? These are delicious, but to me, they are even better when they are cold after being refrigerated!
 
I thought you couldn't have butter (milk) on the SCD? If not, what do you guys use as a substitute in this recipe? I tried following the SCD, but boy is it hard, especially trying to find a place that carries the dry curd cottage cheese.
 
Just finished whipping up a batch, they are good, but I did end up sprinkling just a tad bit of organic sugar on the tops (which is awesome bc I control how much sugar). I don't think my kids would eat them otherwise :) This is an awesome recipe, so easy! Next time I'm going to try it with my vegan butter to see if they turn out the same.
 
Tammy, I am a strict follower of the SCD and can tell you that it is the best treatment at least for me for my UC. I dont want to speak for anyone else but not only are these peanut butter cookies amazing, but the diet is life changing.

Almond flour is ok, but not the same as normal flour. Dont expect it to be as easy to cook with. And do not buy almond flours that are not blanched and finely ground. I really dislike the "bobs red mill" and very much like the "JK Gourmet"
