Well, crohn's disease isn't hereditary to be fair, at the very least it's a confusing way of saying genetic predisposition.

There is a rather small risk factor that predisposes some people and increases their chance of getting crohn's disease. This risk factor is not present in the majority of people who have crohn's disease. In fact the most common genetic predisposition, IBD1 (NOD2) mutation can not be found in Asian people with crohn's disease and is not present in the majority of Western people with crohn's disease.

The majority of people with those predispositions also don't have crohn's disease.

We don't call TB hereditary either and many genetic predispositions overlap between mycobacteria predisposition and crohn's disease.

Hereditary would be something like Huntington's disease, where someone with specific genes will get the disease.

so which variables are missing to explain crohn's for the remaining 73% of cases?

"environmental factors"

it's needed to explain 100% of the cases really, since even identical twins with genetic predisposition have a sub 50% of both getting crohn's disease, and there is non-familian clustering

The disease is on the rise in China too, crohn's disease is no longer rare there, it's becoming a problem there too. It's still behind rates of Europe and the US, but it's quickly catching up.

Maybe your question was just rhetorical, we all know it's not just genetic at this point.

China you say...hmm...aren´t they dealing out antibiotics like candy there? I read something about that, they give antibiotics for "Everything"

i think you will find the diet has changed quite a bit too.
more processed 'food like products'

Yes, that's been going on for a long time though, and there are extra laws now in place that punish hospitals that abuse antibiotics.

The rise in crohn's disease in China seems more recent to me.

Yah, don't know if that's in any way related, but I agree with the increase in fatty foods in China. If you turn on any Chinese channel or look at ads in China, they are non-stop ads about fried foods, they are everywhere. The diet young people eat in China is terrible, they have an obesity problem too now.

On the other hand there are studies that show that dietery fats are not a risk factor in getting crohn's disease:
