2 Question
First 1. How do you get enough calories. I am intolerant to sugar, gluten and soya and I am really struggling with my diet and I am losing weight not that fast but I am still getting Skinner over the past year. Plus I have recently started going to the gym so I need all the calories I can get. I'm wanting to hitting the 3000 mark a day but at the minute I'm only getting about 1000 to 1500 max.
And 2. dehydration I seam to dehydration all the time I can drink all the water in the world and it makes and differance at all.

Dairy can help you put on weight and get calories. If you are dehydrated, you need electrolytes and water alone doesn't have that. You can use sports drinks like Gatorade and increase your intake of foods with salt and potassium.
 
I'm intolerant to wheat gluten, so my wife and I make our own bread or buy from a local baker who makes good glutem free bread. I can handle spelt and kamut, so that makes life a little easier as I have more flour options to choose from.
Have you tried natural peanut butter with no added sugar? It's a great source of calories and protein. There's also a product called PB2, which is dehydrated peanut butter, just mix with water and you've got instant, sugar free pb. I usually have a spoonful or two of that in my oatmeal for breakfast.
For the dehydration you can try coconut water. It has a lot of potassium and a little bit of other electrolytes in it. Or you could try electrolyte tablets that mix with water. Usually found where runners and bicyclists purchase stuff. One popular brand over here is Nuun. I think It's sugar free and has electrolytes and some varieties have some caffiene as well.
 
I will also suggest Nuun, I've been using it on a regular basis since I was diagnosed and since I had my colon removed I use it even more. I paid about $6 for the tube, it makes 6 litres and it's really easy to just throw the entire tube in my bag and buy a bottle of water when needed.
 
For dehydration, let me suggest homemade electrolyte drinks instead of Gatorade, which is a terrible product full of artificial ingredients and fake sugars. To one quart of water, add a couple squeezes of lime juice, a teaspoon of salt, and a teaspoon of sugar. Voila. Don't waste your money on processed sports drinks.

Also, I second the comments on whole milk dairy products, particularly yogurt, which is much easier to digest than straight milk and is full of beneficial bacteria.
