If you E switched to AI paleo and noticed a huge improvement then there are a couple of questions to ask,
-did anything else change that may have had benefits - meds, supplements,?
-how many changes were made in the diet?
It is quite possible that all the improvements are due to just one food being left out of the diet, and it is also possible that it is due to not eating a combination of foods.
Most of the people recommending the AI paleo protocol recommend avoiding these foods for 30-60 days, then reintroducing them one at a time to see if there is a reaction, so some foods are reintroduced and kept, and some are reintroduced and re-eliminated (maybe these ones are left out for a year or so)
Obviously the one at a time testing is so important.
I'm surprised you put rice and corn in the same question,
White rice is generally safe and corn is generally not.
I wouldn't randomly try foods, i would research and reintroduce foods one at a time based on their toxin levels and nutritional benefits, not taste or cravings.

I have been very open and honest about my uncertainty about whether it is the diet or the supplement that have the biggest impact. I have no idea! I do know that we were super strict with a paleo diet for quite some time before introducing the potatoes and we never saw the improvements we are seeing now. Is it the diet? The supplement? The combination? We really don't know. Our plan thus far is to slowly switch things up and see what happens. We plan to see what his labs looks like after his next Draw. If it is still good then we will remove the supplement (because the expense is difficult). If everything is still okay with the labs following that then will add back nuts, etc, etc. I would like to slowly introduce to get him on the basic paleo and possibly the paleo plus white rice. I will say that in the past, white rice has been very unfriendly to him....more so than potatoes. I wish it was clear and obvious, hugh but is it ever? . Given time, we will figure it out (hopefully)!!!
