Oh and his new favorite food is that cauliflower bread. He is asking if I can bake it and cut it into squares and make flat bread sandwiches. I am going to give it a try. I wanted to show you how much this does stick together for us. I don't if it is because it is a different recipe or because I used parchment paper? I will attempt to paste a picture.
 
So we ventured about an hour away yesterday to shop at Trader Joe's and an organic grocery called Earth Fare. E was excited to find some new foods. They had a mild chicken sausage, bologna, dried bananas, and lots of goat's cheeses. We have decided to try goat's cheese for a while and wait about 6 months to try cow's milk cheeses. So far he is doing good :)
It's great that goat's cheeses are proving to be OK. It is expensive, compared with cow's milk cheese, but the flavour is quite strong and so you only need a little in cooking.

Wow, yeah that's not what the bottom of ours looked like. The edges were crispy but I can tell even by the picture that our bottom was a lot softer than that

Post #99 has an attachment with the recipe and I explain in the post how I altered. I find it super easy to make. If you try it then let me know what you think :)
 
Hi all, just now joined. Was diagnosed with Crohn's in 1995, but it's mild. I want to do the GAPS diet, the book is on order, should get here maybe on Monday.

Let us know what you think about the book. SCD and GAPS are very, very similar. In fact, the way we have altered SCD a bit (without the dairy), our diet is just as close to GAPS as it is SCD, if I am not mistaken.

I will. It would be interesting to get the SCD book too, to compare, but the GAPS book was expensive.
 
Without going back through all the threads, I'm not sure whether Kefir has come up as a topic on here. I was looking into it for another thread and noticed that you an make milk kefir with coconut milk. Kefir is supposed to have amazing qualities (having the goodness of yoghurt multiplied a number of times) and might be a positive addition to the diet.

This is way too funny ~ I just got back from chatting with a friend and she was offering to give me some of her Kefir grains and we were wondering about using them in coconut milk. I am thinking about trying it. I have heard it is much easier than making yogurt.

Yes, I was just reading several of them. Now to decide if I want to fool with making my own coconut milk from a fresh coconut (I don't own a vitamix or a juicer, yet! I'm saving up for a good masticating juicer) or using a good organic BPA free canned variety. I'll check the stores next I go.

Making it from fresh coconut is cost prohibitive. We make it from dried coconut flakes. It is easy peasy.

I bought some coconut milk in a can..YUCK! It was so silky! I felt like I was drinking vaseline lol. Is it different if you make you're own?

I haven't even made any nut milk lately because I've started to really enjoy honey in my coffee.

I haven't tried making it yet, but go to youtube and watch some videos of people making it, they pour it out into a bowl or glass when it's finished so you can see the consistency. It looks to me like it's much more liquidy than the canned stuff. By the way, the canned stuff is great in coffee instead of cream.
 
that's how I tried it was in coffee. I was a milk person not cream in my coffee so I could see how people would like it instead of cream.
 
Well I'm just finishing day 2 of the GAPS intro diet. So far so good! I've been a little headachy, but I guess that's to be expected. I haven't read all of the book, but I'm impressed with what I have read.

One other thing I'm doing is an oil pull with coconut oil. First thing I do when I get up each morning is take a spoonful of coconut oil and hold it in my mouth for 5-10 min. then spit. It's supposed to 'pull' toxins out of the mouth. So you must spit it out and not swallow...don't want to swallow back all those toxins.
 
Oh, I did make my own coconut milk and it was awesome. I got a good 5 cups of milk from that one coconut, plus two cups of toasted coconut to boot. Definitely worth the time.

I used it to make ice cream. Added four egg yolks and 3 T honey to sauce pan and heated just enough to melt the honey, added that into to the coconut milk and froze in my ice cream freezer. It tasted great right out of the machine, but froze into a solid block of 'ice' in the freezer. When I am done with the intro diet, I'm just going to thaw it out and use it as milk on my 'cereal-less cereal' (roasted almonds, toasted coconut, fruit)

I bought a 2nd coconut for making coconut milk kefir.
