Sweet and sour sauce

This won't be for everyone, as it contains tomatoes, onions and peppers, which are common problem foods! However, they are blended and I guess you could remove the skins if you were concerned. This recipe makes a huge batch- about 1 litre!

2 peppers (preferably red, orange or yellow)
1 onion
1 carrot
A couple of tablespoons of vinegar
Small tin of pineapple
Tomato puree (double concentrate)
Ginger
Salt
Pepper
Paprika
Lemon juice

Roughly chop the peppers, onions and carrots. Put in a saucepan with just enough water to cover, and the vinegar. Simmer until the veg is soft.

Put the cooked veg in a blender with the cooking liquid, a good squeeze of tomato puree, the pineapple, and a sprinkle of the seasonings.

Blend till smooth, then taste and adjust seasonings to your liking.

Return to the pan and heat through again before serving.
 
Just had a thought, if you have a juicer you could make a similar sauce by juicing the veggies, and thickening with cornflour (cornstarch?) or similar.
