I take a high dose of Amitriptyline and I sleep so well on it.
Some medications used to treat Crohn's can cause severe insomnia, so you may want to check you're not taking anything that could be contributing to your sleep problems.
I know people often give a lot of tips about "sleep hygiene" - e.g. keeping to a routine, not have phones and computers on in the evening, taking some exercise, etc. - but I think there comes a point where these just won't help, and medication is needed. But you need to be careful about some sleep medications as some can result in addiction.
I would also suggest you address the causes of your insomnia if possible - ask a doctor about your hormonal symptoms, and consider what it is that you are anxious about.
So maybe the first thing for you to do would be to make an appointment with a doctor to discuss insomnia, hormone issues and anxiety (if you feel the anxiety may be medical, or if you think you may want to try treating the anxiety medicinally as well).
